Delicious apple crumble mince pies made with a fragrant filling of Bramley apples, light brown sugar, and a hint of cinnamon, topped with a crumble and vegan mincemeat. Perfect for the festive season!
Combine flour, sugar, and salt in a bowl for the pastry. Rub in the margarine (add 1-2 tsp of water if the pastry doesn’t hold). Knead briefly, roll into a ball, wrap in baking paper, and refrigerate.
Peel the apples, remove cores, and dice into 1cm chunks. Add to a saucepan with sugar, cinnamon, lemon juice, and 4 tbsp of water. Simmer on low for 10 minutes until soft.
For the crumble, add flour, sugar, and margarine to a mixing bowl. Rub the margarine into the dry ingredients until reaching a crumble-like consistency.
Preheat oven to 180°C / 356°F and grease a 12-hole mince pie tray with margarine.
Flour a worktop and rolling pin, and roll out pastry to 3mm thick. Use a 7cm round cutter to cut out 12 circles. Reroll as necessary.
Place pastry circles in the tray. Add a teaspoon of apple mixture, followed by a heaped tsp of vegan mincemeat, and a sprinkling of crumble on top. Bake for 25-30 minutes until golden.
