Banana Chocolate Pancakes

1: Peel the banana and add the flesh to a mixing bowl. Mash the banana until smooth and runny.

2: Add the plant-based milk and apple cider vinegar to the bowl and stir.

3: Add the sugar, baking powder, bicarbonate of soda, cocoa powder, and flour; combine until mostly smooth. If the batter is too thick, stir in another splash of plant-based milk.

4: Heat a little oil or vegan butter in a frying pan on medium heat.

5: Once hot, spoon 2 tablespoons of the pancake batter into the pan and use a spoon to ease the edges into a perfect circle.

6: Fry for 1-2 minutes, or until the edges look cooked, then flip the pancake and fry for another 1-2 minutes.

7: Repeat this step with the remaining batter to make the rest of the pancakes.

8: Meanwhile, melt the dark chocolate in a heatproof bowl over a saucepan of simmering water.

9: Pour the melted chocolate over the pancakes to serve. Enjoy!
