These cheeky crumble squares are ridiculously tasty and super easy to make. They consist of a buttery crumb base layered with a sweet blueberry compote, perfect for a delightful treat. Makes 15 squares.
Preheat the oven to 180°C / 356° fan. Line a baking tin with baking paper and brush with oil.
Combine the buckwheat flour, plain flour, light brown sugar, baking powder, and cinnamon in a mixing bowl. Add the plant-based margarine and rub until crumb-like.
For the blueberry compote, heat blueberries, light brown sugar, and lemon zest in a saucepan for 6-8 minutes. Combine cornflour with water, add to the saucepan, and simmer until thickened.
Add three quarters of the crumb to the baking tin, press down, pour the blueberry compote on top, and sprinkle the remaining crumb.
Bake for 25-35 minutes until golden brown. Cool in the tin, then pull out using the baking paper, slice into 15 squares.
