This vegan chocolate fudge combines rich dark chocolate with Captain Morgan's Original Spiced Gold rum for a deliciously naughty treat. With only 5 ingredients, it's simple to make and perfect for sharing or enjoying alone while relaxing at home. The fudge is smooth, rich, and can be refrigerated for 5 days in an airtight container. Serve it with a Long Island Iced Tea for an extra twist!

What you need

7 fl oz coconut milk

14 ⅛ oz dark chocolate

3 tbsp maple syrup

4 tbsp smooth peanut butter

Instructions

1: Line a 20cm x 15cm (8” x 6”) dish with baking paper.

2: Warm up the coconut milk in a saucepan until it’s about to start simmering.

3: Break up the chocolate into small pieces and pour in the hot coconut milk. Stir until the chocolate has melted.

4: Stir in the Captain Morgan Original Spiced Gold and maple syrup, gently heat if needed.

5: Pour the chocolate mixture into the pre-lined dish and smooth the top.

6: Heat the peanut butter until it’s runny and pour it over the chocolate mixture.

7: Use a chopstick to draw swirls into the top of the fudge.

8: Leave it to cool and then chill for 1-2 hours in the fridge or freezer.

9: Slice the fudge into squares before serving.
