Hot ‘n’ Spicy Homemade Noodles

1: To make the noodles, combine plain flour, water, and salt to form a dough.

2: Knead the dough until smooth, then rest for 20 minutes.

3: Roll out the dough and cut into noodles.

4: In a pan, heat vegetable oil and sauté diced onion, garlic, and ginger until fragrant.

5: Add vegan mince and cook through.

6: Mix in Lee Kum Kee Dark Soy Sauce, rice vinegar, Chiu Chow Chilli Oil, vegetable stock, Chinese 5 Spice, sesame oil, maple syrup, and pepper.

7: Simmer the sauce for about 10 minutes.

8: Serve the homemade noodles topped with the ‘meaty’ sauce and garnish with sliced spring onion.
