A showstopper burger featuring crispy onion bhajis, coconut raita, and a fresh cucumber salad, all wrapped in a vegan brioche bun. This recipe makes 2 burgers.
Preheat oven to 200C / 425F fan. Add potato to tray, drizzle with vegetable oil and sprinkle with salt. Stir then bake for 25-30 mins.
Combine plain flour, cornflour, curry powder, and a pinch of salt in a bowl. Add 100ml of water and mix. Add onion, coriander, ginger, and garlic, and mix.
Add vegetable oil to a frying pan over high heat. Once very hot, add 4 large spoonfuls of onion mixture to the pan and press to flatten into patties. Fry for 3-4 minutes on each side.
Grate half of the cucumber and dice the rest. For the coconut raita, combine grated cucumber with coconut yoghurt, mint sauce, and a pinch of salt in a bowl. Combine lamb’s lettuce, diced cucumber, and a drizzle of olive oil in a separate bowl.
When chips are almost done, sprinkle over chilli flakes and add brioche buns to the tray. Bake for 3-4 minutes.
Spread a spoonful of raita on the base of each brioche bun. Add the bhaji patties, mango chutney, cucumber salad, and remaining raita. Serve with chilli chips.
