This fun twist on the classic roast potato is a great alternative for your Sunday roasts! Perfectly cooked and seasoned potatoes are stacked in a swirl for an impressive presentation.
Preheat the oven to 180°C fan / 400°F.
Prepare the herbs and garlic, and set aside.
Peel and thinly slice the potatoes to approximately 3mm thick and transfer to a large mixing bowl.
If necessary, soak the sliced potatoes in cold water to prevent discoloration, then drain and pat dry.
Add the thyme, rosemary, garlic, lemon juice and zest, 4 tablespoons of olive oil, and salt and pepper to the bowl with potatoes. Mix until coated.
Lightly grease a round oven-proof dish or pan with olive oil.
Stack the potato slices upright in the dish to create a swirl and pour any remaining mixture over the slices.
Roast for 70-80 minutes or until crispy and golden, adjusting the time if needed based on your oven.
Cover with baking paper or foil if the potatoes begin to brown too quickly.
 Sprinkle extra salt to serve.
