A delicious twist on the traditional Japanese-style sandwich known as 'sando', featuring baked and breaded tofu, miso curry mayonnaise, and fresh veggies, all stacked inside ciabatta rolls.
Preheat the oven to 200°C fan / 425°F.
Press the tofu to remove as much water as possible, then slice it in half and season both sides with salt and pepper.
In a shallow bowl, combine flour with 1/2 cup of water.
In another shallow bowl, add breadcrumbs, curry powder, and 1 tbsp of vegetable oil, then mix with fingers.
Dip a slice of tofu into the batter, shake off excess batter, then drop onto the breadcrumbs.
Coat the tofu in breadcrumbs and transfer to a baking tray. Repeat for the remaining tofu slices.
Bake for 30-35 minutes or until crispy, turning halfway through.
Meanwhile, combine all the ingredients for the sauce in a small bowl and set aside.
Once tofu is ready, build the sandwiches using ciabatta rolls, lettuce, tomato, breaded tofu, and sauce.
