Delightful watermelon vodka jelly shots are perfect for summer parties. This fun treat serves 10 and combines watermelon, vodka, and agar flakes for a refreshing experience.
Take 1/2 a watermelon and scoop out all of the flesh, removing the seeds as you go. Place kitchen towels inside the watermelon half to soak up the moisture.
Blend all the watermelon flesh until smooth.
Strain the watermelon juice through a sieve, discarding the pulp.
Measure 300ml of the strained juice and transfer to a saucepan on medium heat. Add sugar and agar flakes, and simmer only after all agar flakes dissolve.
Measure another 500ml of strained juice, mix with the saucepan mixture, and stir in vodka. Pour into the watermelon half.
Cool on the counter and then transfer to a freezer for 3 hours.
Cut into chunky triangular wedges, ensuring jelly stays intact on the rind.
 Serve immediately.
